Makes 36 x5cm pancakes.
Ingredients: buckwheat flour, wheat flour, sugar, baking powder vanilla, salt, bi-carb.
Method:
- Mix contents of packet with 2 large eggs, 400ml of milk or substitute, 20ml of oil or butter.
- Pan fry in a little oil or butter. Delicious served with your favourite fruit or with a savoury topping.
Savoury Pancakes
This mixture lends itself to a great savoury pancake. Cook the pancakes as per recipe and sit aside to cool. Meanwhile cook your favourite savoury sauce ( a savoury mince, tomato based always works well but it can be a bean chilli or a creamy chicken or mushroom sauce). Place the pancakes on a baking tray , top with your choice of savoury topping and sprinkle with a little cheese. Bake in a moderate oven approx. 170c for about 10 minutes until heated through. Serve with a salad. The pancakes make the sauce go so much further and provides you with an interesting and personalised take on a family dinner.
